02 Jan Simple Chicken Newyorker
This meal is so quick and easy for the days that you’re flat out. It takes just minutes to prepare, stick it in the oven for about 40 minutes and you’re done!
1 chicken breast per person
2 rashers of bacon per breast (3 if breast is large)
Chop the onion and grate the cheese
Slice the breast from top to bottom. You don’t want to cut all the way through the breast, just about 3/4 of the way.
Stuff breast with chopped onion and cheese
Lay the 2 rashers of bacon down in an X so that they overlap one another and pop the breast in the middle
Wrap the bacon around the breast so that the bacon is holding the chicken together and stopping the stuffing from falling out
Pop onto baking tray and put into the centre of a preheated oven at 200 degrees for 20 minutes
After 20 minutes flip the chicken over and cook for a further 20 minutes
There are so many possibilities with this meal when it comes to sides. Our favourites are:
Rice with peas and sweetcorn (I microwave the peas and sweetcorn in butter to give it a lovely taste)
Cheesy and onion mash (Just mash some potato and add fried onions and a load of cheese and then bake for around 10 minutes to melt the cheese)
And even pasta!
The possibilities really are endless!! You can mix this meal up however you like, some people like to add BBQ sauce but we prefer to keep it simple and I don’t think you’ll be disappointed.
